Yes, there is nothing like honey and tea that can make us feel like Pooh, I mean, like ourselves again. These lemon honey cookies will surely do the trick!

Why bake it?

These lemon honey cookies are so soft, fluffy and yummy with the perfect amount of sweetness from the honey and glaze and a hint of tangyness from the lemon. Kind of like lemon honey tea, but in cookie form!

Best paired with?

The lemon honey cookies will go well with warm lemon tea with mint leaves. Some green tea or ginger tea would also be nice to compliment that sweetness and tangyness from the cookies.

Ingredients for cookies
  1. 1/2 cup white sugar
  2. 7 tablespoons butter, softened (or unsweetened applesauce!)
  3. 2 teaspoons grated lemon rind
  4. 1/2 teaspoon of lemon juice/extract
  5. 1/3 cup good quality honey
  6. 1 large egg
  7. 1 3/4 cups all-purpose flour (wheat flour would also work)
  8. 1 teaspoon baking powder
  9. 1/2 teaspoon salt
  10. 1/4 cup plain fat-free Greek yogurt
  11. Cooking spray (if not using parchment paper)
Ingredients for glaze
  1. 1 cup powdered sugar
  2. 1 - 2 tablespoons fresh lemon juice (add based on how tangy you want it)
  3. 2 teaspoons grated lemon rind
  4. 1 teaspoon of water (optional; add if it's too thick)
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Grease baking sheets with cooking spray, or place parchment paper on top.
  2. In a large bowl, beat sugar, butter (or applesauce) and lemon rind until light and fluffy.
  3. Add honey, lemon juice and egg and mix until smooth.
  4. In a medium bowl, combine flour, baking powder, and salt.
  5. Add dry to wet ingredients alternately with yogurt starting with the flour mixture.
  6. Drop 1 tablespoon of batter onto baking sheets with 2 inches separating them.
  7. Bake for 12 - 15 minutes until lightly browned.
  8. In a small bowl, combine powdered sugar and lemon juice. Add water if the consistency is too thick.
  9. Brush glaze over hot cookies. Sprinkle with lemon rind.
Notes
  1. These cookies are apparently only 89 calories per cookie! And that is based on using butter so it will probably be less if you use unsweetened applesauce.
