All you need is one small bite

A few years ago, I decided to buy a mini muffin pan because mini muffins/cupcakes are adorable, and because I always have a hard time finishing a regular sized muffin/cupcake (is it just me?).

There is just something about being able to consume their yummy goodness in just one bite (or two if you’re a nibbler like me).

Mini Red Velvet Cupcakes

Besides the fact that these mini red velvet cupcakes are adorable, they are also very delicious

  • The red velvet cake is moist and flavorful.
  • The cream cheese frosting is extra creamy and cheesy.
  • The nice touch of pecan on top not only adds to the presentation, but give that wonderful crunch when you bite into the mini red velvet cupcake.

It is pretty much the same thing as making cupcakes. You just need cupcake liners!

Oh and please don’t chop up the pecans! It’s so much easier and prettier to place one on top of the cupcake.
